Caul'n'cheese ;)

Ok, so let me begin by saying how proud I am that my family has decided to take the week long veg challenge! yay! :)
And also, let me say, I was craving mac'n'cheese, but was feeling lazy and didn't want pasta haha :) So I created a different version of this dish :) Hope you like it.
And, fam... You rock!!!!

What you will need:

1 whole cauliflower head (in this case, because I love the color, we used the purple kind)cut into medium florettes
2 tbsp earth balance
3tbsp all purpose flour
panko bread crums
1 or 2 garlic cloves, minced
1 can coconut milk
1 bag daiya cheddar cheese
2tbsp silken tofu
1/2 cup spinach coarsely chopped

What to do:

First, you need to preheat the oven to 350°F.
Meanwhile, bring large pot of salted water to a boil, add cauliflower, and allow to boil for about 7 minutes... just enough to soften the cauliflower, but not so much that it slips off the fork. Then drain liquid into a cup (you will use 1 cup of this liquid) and dump the rest
On a separate pan, melt the earth balance, and add flour to it; whisk thoroughly and add coconut milk, and garlic until sauce is thickened, whisking constantly. Then add the liquid and the silken tofu adn the cheese until cheese is melted and creamy (some arm strength will be required)
Cover a backing dish with foil, and place the cauliflower and spinach
Spread cauliflower mixture in baking dish, and sprinkle with breadcrumbs and place in oven for about 30 mins or until the crums are crisp and the cheese is less gooey
