Rainy day Veggie Sandwich

So, I know it is bright and sunny today, but this rainy week called for some much needed comfort food. So, in addition to my standard basil tomato soup and grilled Daiya cheese, I decided to make my self a more substantial, yet, just as satisfying veggie sandwich. Hope you like it :)

A couple of slices of Eggplant
A couple of slices of zucchini
Two or three slices of tempeh bacon
Daiya Cheese
Spinach or Swiss Chard
2 slices of Whole Wheat Ezekiel Bread
Hummus (enough to spread on the toast)

In a pan cook the eggplant and zucchini
Once the veggies are ready, take them out and cook the tempeh bacon until lightly brown
While you cook the tempeh, toast both slices of bread and smear hummus on them once they are ready
Once the bacon is ready, assemble your sandwich (don't forget to add the leafy greens ;) or the cheese )

And that is it. Super simple, but so very delicious on a rainy night or day :)

Sunday Scramble... YUM!

Time for a new recipe people! :) And this morning, I had a hanckering for tofu scramble (having had a fantastically scramble in California last year, that I just couldn't forget I guess) So here it is. My Sunday Scramble Recipe. Hope you enjoy.

6 Medium mushrooms (chopped)
6 Asparagus (chopped)
1 Tomato (chopped)
1 Garlic Clove (chopped)
1 tbsp earth balance butter (or to taste)
Salt (to taste)
1/4 cup (or a handful) Daiya Cheese
1 tbsp Tumeric
1 tbsp Dill
Hot Sauce (I added Cholula)
Tofu

Simmer the garlic and butter on a hot pan until garlic is lightly brown. Then add the mushrooms, asparagus, and tomatoes. Cook until ready (you may like them a little more on the raw side or more on the cook side, so follow your inner cooking voice)
Cut a good piece of tofu (I used about 1/2 of the square) and then squeeze all the water out with a couple of paper towels. Once you have finished squeezing it, crumble it up and add to the veggies.
Add the seasonings and then add the cheese for texture (and flavor). And you are done! :)

As a small side note,  anytime I eat tofu, I like to also consume a grain of some type, so for this morning's scramble, I added a slice of whole wheat Ezekiel Bread and I smeared some avocado on it too, just because I love avocado.
