Sunday Scramble... YUM!

Time for a new recipe people! :) And this morning, I had a hanckering for tofu scramble (having had a fantastically scramble in California last year, that I just couldn't forget I guess) So here it is. My Sunday Scramble Recipe. Hope you enjoy.

6 Medium mushrooms (chopped)
6 Asparagus (chopped)
1 Tomato (chopped)
1 Garlic Clove (chopped)
1 tbsp earth balance butter (or to taste)
Salt (to taste)
1/4 cup (or a handful) Daiya Cheese
1 tbsp Tumeric
1 tbsp Dill
Hot Sauce (I added Cholula)
Tofu

Simmer the garlic and butter on a hot pan until garlic is lightly brown. Then add the mushrooms, asparagus, and tomatoes. Cook until ready (you may like them a little more on the raw side or more on the cook side, so follow your inner cooking voice)
Cut a good piece of tofu (I used about 1/2 of the square) and then squeeze all the water out with a couple of paper towels. Once you have finished squeezing it, crumble it up and add to the veggies.
Add the seasonings and then add the cheese for texture (and flavor). And you are done! :)

As a small side note,  anytime I eat tofu, I like to also consume a grain of some type, so for this morning's scramble, I added a slice of whole wheat Ezekiel Bread and I smeared some avocado on it too, just because I love avocado.
