Vegan French Toast Part Two - The Pink Batter
Ok, so, since my family was all bravely involved in the "Veg Challenge" this past week, I decided to prepare one of my fave vegan dishes... French Toast! :) But I tweaked the original recipe (which you can see in past blogs) and added a few new items. And according to the family, they were amazing! :)
What You Will Need
6 strawberries
1 banana
2 tbsp silken tofu
1 tbsp cinnamon
1/2 a cup (or 1 cup depending how many servings you are making) coconut milk
Bread (we used Ezekiel)
Earth Balance Butter - as needed while you cook the toast
What to Do
Blend the fruit, cinnamon, milk and silken tofu until creamy.
Dip the toast in the batter and then cook in a medium saute pan on medium high for 5 minutes or until lightly brown; then flip sides and repeat.
