Hello! :) So, I decided to be daring and try to make a stuffed squash. The results.... YUM! Really. Even the hubby loved it haha :) Hope you all enjoy it as well.
What you will need:
1 large acorn squash
1 cup chopped kale
1 cup chopped spinach
1 chopped zucchini
4 chopped large mushrooms
bunch chopped brocolli
1 serving (1 cup) of quinoa
1 tbsp earth balance
spices (I added the Israeli spices we bought while in Israel this year, so I don't have any specifics on these. sorry. I can tell there is oregano and sesame seeds and a bit of dill so def. add some of those)
1/2 lime juice
salt and pepper to taste
olive oil
What to do:
Preheat the oven to 400˚
Cut the squash in half and take the seeds out.
Line a pan with foil and then place the squash on it. Then drizzle with olive oil and salt (not too much salt people. Just enough to add flavor)
Once the oven has reached 400˚, place the squash inside and leave in there for about an hour, to an hour and 10 mins
Meanwhile, add one cup of quinoa and 2 cups of water to a pot. Bring to a boil, and then cover. Bring heat to low and allow to simmer for 12 to 15 mins
Chop the veggies and mix them into a pan along with the earth balance, lime juice and the spices.
When the squash is ready, take out of oven, and then combine the veggies and quinoa and stuff the squash :) That's it. Enjoy! :)
